The butter of Las Nieves Butter Shop It is made by whipping the cream until the fat and whey are separated, then it is kneaded, weighed and wrapped.
Butter is made from cream that contains between 35% and 42% of fat.
First it is heated to kill the bacteria and then it is cooled to between 4 and 5 °C, when it is at 7 °C it is beaten and then allowed to rest in stainless steel tanks.
It is beaten again to separate the protein and fat and the fat is made into butter.
Butter represents the main source of vitamins A and D, and the same can be said for E.
It contains mineral salts such as calcium, phosphorus, sodium, potassium, magnesium, zinc, manganese, iron, copper, fluorine, iodine, chromium and selenium.
