Our chops of Basque origin have up to 40 days of maturation to further enhance their flavor. Animals carefully selected from small traditional farms in the Basque Country. Animals pampered and cared for as part of the family. They are pieces with a fine grain that melts when cooked, giving them flavor and texture. They are older cows weighing more than 400 kg per carcass, and are usually of the Friesian, Simmental, Limousin breed or a cross between these. Their diet is essential and care is taken to ensure that it is based on grass and cereals produced in the farm itself, thus achieving unique specimens.

These steaks have a good fat coverage and maintain the bone to add flavor during preparation. This chop or ribeye is perfect for grilling, frying or grilling. The choice of cooking mode will depend on the thickness chosen, with the thinnest thicknesses being recommended for griddle or frying pan and the thickest ones for grilling.
