Canned Cockles, What is your favorite dressing?

The Cockle is a bivalve mollusk that lives in salt waters. 

Cockles have numerous properties that benefit our body, such as their iron content. To improve their absorption, it is advisable to accompany them with some acidic food such as lemon.

When preparing the appetizer with a preserved cockle, we can accompany it with a delicious dressing. 

Here we propose three different ones that are very easy to prepare to enjoy a good vermouth/aperitif.  

Canned cockles with lemon:

The most basic does not make it any less delicious. 

Ingredients:

½ lemon

Black pepper

1 can of cockle the peperetes

Canned Cockles with Paprika:

Ingredients:  

½ lemon

1 can of cockle the peperetes

Paprika

Wine vinegar

Ground pepper

In a small glass of coffee, add up to half of the vinegar, add a pinch of paprika and a pinch of ground black pepper. We stir the mixture well and squeeze half a lemon. It is advisable to make the dressing a day before to enhance the flavor. 

We tip the can of cockles into a bowl and drizzle with the sauce we have prepared. They are now ready to taste.

Canned cockles with citrus aroma:    

Ingredients:

Ground black pepper

1 can of cockle the peperetes

1 lemon

½ orange

3 tablespoons of vinegar

2 tablespoons olive oil

ginger zest

Coriander to sprinkle

We squeeze the lemon and half the orange, reserve in a bowl. 

Grate the ginger and add the ground black pepper along with the oil and vinegar.

We mix all the ingredients and set aside to add it to the cockles.  

Finally we sprinkle a little cilantro.
