Mussels (Mytilus galloprovincialis) from the Galician estuaries, of uniform size in pickled sauce and hand-selected in each can.
PRODUCTION PROCESS: The mollusks are washed with clean seawater, free of dirt, a process controlled through organoleptic inspection upon arrival at the factory. They are then cooked. Once the mussel meat is obtained, it is fried in olive oil, deveined, and placed in the container. Next, the covering liquid, in this case the escabeche, is added. After hermetically sealing, the containers are sterilized, an important process for product preservation, completely avoiding the addition of artificial preservatives. They are then taken for storage and subsequent sale. All our mussels (Mytilus galloprovincialisIt comes from the estuaries. It is purchased exclusively during the months of October, November, and December.
